FESTIVE CARROT APPLE BAKE
INGREDIENTS
1 can (21 oz.) apple pie filling
2 tbsp. butter
1 medium onion, halved and thinly sliced
1 pound carrots pared and sliced on the diagonal
2 tbsp. brown sugar
1 tsp. cinnamon
3/4 cup whole pecans
2 tbsp. butter
DIRECTIONS
Slowly sauté onion in 2 tbsp. butter in a medium fry pan until onion is medium brown. Spray a 2-quart casserole with cooking spray.
Add onion, apple friut filling and carrots. Stir to combine.
In a small fry pan, melt an additional 2 tbsp, butter. Add brown sugar, cinnamon and pecans; cook on medium heat until pecans become coated with sugar mixture.
Pour pecans over carrot mixture. Bake in preheated 350° F oven for 1 hour 15 minutes or until carrots are tender. Serve hot as a side dish.
