PORK ROAST WITH APPLES
INGREDIENTS
1 can (21 oz.) apple pie filling or topping
2 tbsp. olive oil
4 center cut one inch thick pork chops
1 medium red onion, thinly sliced
2 tbsp. cider vinegar
1/2 tsp. salt
1 tsp. fresh ground pepper
1/4 cup dry white wine
1/2 cup apple cider
DIRECTIONS
Preheat oven to 350° F.
Heat two tbsp. olive oil in frying pan over medium-high heat. Add pork chops and cook until rich brown, approx. 3 minutes. Turn and brown other side. Remove chops from pan and transfer to baking dish.
Add onion to pan and cook, stirring, until golden and softened, about 3 minutes. Turn off heat.
Combine onion, pie filling, vinegar, salt, pepper, wine and apple cider. Pour over pork chops and apple compote on plate. Delicious with potato pancakes or spaetzel.
