Apple Super Muffins

Fat free, cholesterol free filling muffins for a great start to your busy day.

Ingredients

For 1 Dozen(s)

  • 1/4 cup unsweetened applesauce
  • 1 medium apple cored and chopped
  • 1 cup whole wheat flour
  • 2 teaspoon(s) baking powder
  • 1/2 teaspoon(s) salt
  • 1 3/4 cup Kashi Good Friends™ cereal
  • 3/4 cup skim milk or soy milk
  • 2 egg whites
  • 1/4 cup maple syrup
  • 1/4 teaspoon(s) cinnamon
  • Non-stick cooking spray

Cooking time: 25m

Directions

  1. Preheat oven to 400ºF
  2. In a small bowl, stir together flour, baking powder and salt. Set aside.
  3. In a large bowl, combine Good Friends™ with milk and let stand 2-3 minutes. Add the egg whites and beat well. Stir in applesauce, apple pieces, cinnamon and maple syrup. Add flour mixture and mix only until dry ingredients are moistened.
  4. Fill sprayed muffin tins. Bake for 25 minutes or until lightly browned.
