Grilled Pork Chops with Apple Maple BBQ Sauce

A quick and easy apple-based BBQ sauce which simmers while the chops are grilling.

Ingredients

For 1 people

  • 4 Bone-in pork chops
  • 2 tablespoon(s) olive oil
  • Salt & pepper to taste
  • BBQ SAUCE
  • 1 lb. of New York McIntosh apples, peeled, cored & diced
  • 1/4 cup butter
  • 1 tablespoon(s) minced garlic
  • 1 jalapeño pepper, seeded & minced
  • 3/4 cup pure maple syrup
  • 1/2 teaspoon(s) ground cinnamon
  • 1/8 teaspoon(s) ground allspice
  • 3/4 cup Dinosaur BBQ sauce
  • 1/4 cup water
  • Pinch each of kosher salt and black pepper

Directions

  1. Fire up the grill and get it nice and hot while you do some cooking inside.
  2. Brush the pork chops with olive oil and season with salt & pepper to taste.
  3. Throw together the sauce.  Melt the butter in a saucepan.  Toss in the garlic and jalapeños with a pinch of salt and pepper, cooking until soft.  Dump in the apples and give them a stir.  Cook until soft but not mushy; 8-10 minutes.
  4. Add the maple syrup, cinnamon, allspice, BBQ sauce, water and simmer gently for 15 minutes.
  5. Keep warm.
  6. Get out and check your grill.  If you’re using charcoal, spread a nice even bed of coals and set the chops directly over the coals.  When the juices rise up to the surface near the bone, give the chops a flip.
  7. Continue cooking until the meat reaches an internal temperature of 145-150 degrees.  All in all, the chops should be done in 8-10 minutes.  Don’t overcook them.
  8. Serve with the sauce spooned all over.
