Celebrate Passover & Easter with these great recipes using NY State Apples

Apple Cranberry Charoset Molly's Apple Sharlotka

Charoset is a traditional food served during Seder, traditionally made with apples, the evening ritual that observes the beginning of Passover. Charoset is a paste made of sweetened fruits, nuts and spices. Symbolically, it represents the mud that the ancient Israelites used to make bricks while enslaved in Egypt.

Debbie’s Charoset Recipe
(or McCharoset using McIntosh apples)


1 cup grated New York McIntosh apples (peeled and cored before grating)
3 Tablespoons concord grape juice
3 Teaspoons sugar
¾ Teaspoons cinnamon
½ cup ground walnuts

Mix all ingredients and serve.

Refrigerate any leftovers, which is highly unlikely with McIntosh apples.

Try this delicious Apple Cake recipe using Golden Delicious apples for a tasty treat for your Easter table.

Molly's Apple Sharlotka

7- New York State Apples (We like McIntosh in this recipe), peeled and diced in ½” to 1” cubes
3 Eggs
1 Cup Granulated Sugar
1 Tsp Vanilla Extract
1 Cup All-purpose Flour
1 Tsp baking Powder
½ Tsp Cinnamon
1/8 Tsp Nutmeg
Confectioners Sugar for finish

Preheat oven to 350° Line bottom of 9 inch springform pan with parchment paper circle and butter pan and paper. Place diced apples in prepared pan. In mixing bowl, add granulated sugar and eggs, beating well. Add vanilla and then stir in dry ingredients until just blended. Pour batter over the prepared apples and smooth over and into the apples to allow it to settle. We like to gently tap the pan on the counter, which evenly distributes the batter throughout the pan.

Bake in preheated oven for 45-50 minutes until cake tester comes out clean. Cool for 20 minutes before flipping out onto plate, then again onto serving platter. When cool, dust with confectioners’ sugar and serve with vanilla ice cream or whipped cream.
