- 1 tablespoon(s) butter
- 3 eggs
- 1/4 teaspoon(s) salt
- 1/8 teaspoon(s) ground black pepper
- 1/4 cup applesauce
- 1/4 cup sharp cheddar cheese, grated

Directions
- In an 8-inch skillet, heat butter to bubbling.
- Beat eggs with salt and pepper. Add to skillet, swirling to distribute eggs.
- Cook about two minutes until slightly set. Sprinkle with cheddar cheese on eggs and top with apple sauce.
- Cook another minute or two, fold omelet to cover filling. Turn out onto warmed plate.
