Mini New York Apple Cheddar Quiche

Simple and easy quiche cups, perfect for a light meal accompanied by a salad.

Ingredients

For 1 people

  • 1 New York Apple
  • 30 mini phyllo shells
  • 5 large eggs
  • 4 ounce(s) cheddar cheese
  •   Salt, pepper, nutmeg, Dijon mustard

Cooking time:   15m

Directions

  1. Preheat oven to 350 degrees. Arrange 2 packages (30) mini phyllo shells on a parchment lined cookie sheet. Finely dice 1 New York Apple and divide among the shells.
  2. Wisk 5 eggs, 1 teaspoon Dijon mustard, ¼ teaspoon salt, pinch pepper and nutmeg in a large measuring cup.
  3. Pour mixture into phyllo shells. Add 4 ounces of shredded cheddar cheese.
  4. Bake for 15 minutes. Let cool slightly before serving.
